These cauliflower tacos are made with a blend of homemade taco spice, roasted cauliflower, caramelised walnuts and chipotle. Loaded into soft shell tacos these tacos have the perfect combination of spice, different flavours and texture and have a sweet and sour taste.
Cauliflower tacos are a perfect meal idea for a meatless Monday or as a sociable meal with friends and family. Made with mini soft shell tacos, these buffalo cauliflower tacos can be enjoyed on their own or as tapas. They pair well with guacamole, salads or even with a side of curried chickpeas.
This tasty taco recipe is a cross between vegan junk food and healthy eats and is comfort food at its finest. No need for takeouts with this satisfying dish. Not only are Tacos quick and easy to make, but they can also be made with a few simple ingredients. These Vegan Tacos taste so delicious and full of flavour that you will almost forget that they are made with healthy ingredients. Vegan cauliflower tacos are made with a homemade blend of spices which is similar to fajita seasoning. The seasoning is then mixed into cauliflower florets which are then roasted in the oven.
The best recipe for cauliflower tacos is actually quite simple. You will need; Soft shell tacos, Cauliflower, Red cabbage, Tomatoes, Chipotle, fresh chillis, caramelised walnut, pomegranate and tomatoes. You can make these as mild or as spicy as you fancy!

TACO TOPPINGS
There are endless varieties of different toppings you could add to your vegan tacos. Traditionally, tacos are topped with fresh herbs, hot sauce and freshly squeezed lime. Here are some tasty and healthy additional toppings you could add to your tacos for a fresh taste;
- Vegan cheese
- Shredded lettuce
- Chopped tomatoes
- Diced red onion
- Sour cream
- Guacamole
BEST RECIPE FOR TACOS
Most of us have tried tacos in a crispy corn shell or a soft flour tortilla, loaded with lots of toppings. But this Taco recipe uses only fresh and healthy ingredients which is what sets it apart from your traditional ground beef and cheese tacos. The reason why this is the best vegan taco recipe is because its is made with a flavorful homemade taco seasoning.
To make your own Taco seasoning you will need;
- 1 TSP Onion Powder
- 1 TSP Garlic Powder
- 1 TSP Smoked Paprika
- 1 TSP Ground Cumin
- 1 TSP Chilli Powder
- Salt and Pepper
HOW TO MAKE TACOS
These tacos can be whipped up in under 30 minutes and can be enjoyed hot or cold, which is why they taste great even the next day for lunch! Cauliflower tacos can be made in just a few simple steps;
- Mix together the spices in a small bowl
- Separate the cauliflower into small florets and stir in the spices
- Roast the cauliflower until soft and tender
- Toast the walnuts in balsamic vinegar, sugar and pomegranate
- Assemble your tacos by spooning in 1 Tbsp of roasted cauliflower and top with your favourite traditional taco toppings.
- Drizzle the tacos with chipotle
- Sprinkle the tacos with fresh parsley, coriander or chilli

Ingredients
1/2 Cauliflower
1/2 Cup Shredded Red Cabbage
1/4 Cup Walnuts
2 Tbsp Pomegranate
2 Tbsp Balsamic Vinegar
1 Tbsp Brown Sugar
3 Tsp Taco Seasoning
2 Tbsp Olive oil
TOPPINGS:
Guacamole
Tomatoes
Chilli
Coriander
Preheat oven to 175 Degrees
- If you are making your own Taco seasoning, mix the spices together in a small bowl (see notes)
- Separate the cauliflower into small florets and place in a large bowl. Drizzle some olive oil over the top of the cauliflower and then mix in the taco seasoning until the cauliflower is evenly covered in seasoning.
- Scatter the florets onto a lined baking tray and place in the oven. Roast the cauliflower until soft and tender and it begins to turn a golden brown.
- Toast the walnuts in a small frying pan over medium heat until they begin to turn golden and then stir in the balsamic vinegar, sugar and pomegranate seeds. Cook, stirring often until they become sticky or caramelised.
- Assemble your tacos by spooning in 1 Tbsp of roasted cauliflower and top with your favourite traditional taco toppings.
- Drizzle the tacos with chipotle
- Sprinkle the tacos with fresh parsley, coriander or chilli
