Healthy Vegan Greek Salad

Delicious and easy to make a healthy vegan greek salad with black olives, topped with vegan feta and a homemade zingy vinegarette.  Loaded with fresh crunchy vegetables and can be whipped up in a matter of minutes!

Greek salad is fresh-tasting, healthy and simple to make and can be thrown together in no time.  It is a timeless classical recipe that can be enjoyed at BBQ’s, dinner parties, for lunch or to accompany pasta dishes or ‘vegan’ meatless recipes.   Greek salad is a dish that never goes out of fashion, its flavoursome, fresh and tasty and bursting with nutritional benefits.

You will love this simple and healthy loaded vegan greek salad which uses fresh chopped cos lettuce, ripe sweet cherry tomatoes, red onion, black olives, vegan feta and a homemade red wine vinegarette.   My Greek Chickpea salad was a huge hit and my Vegan Mediterranean recipes are very popular at the moment, so I’m sharing with you one of my favourite go-to salad recipes.

Unlike your traditional greek salad which only contains lettuce, red onion, black olives and fetta, my healthy vegan greek salad is loaded with extra fruits and vegetables such as tomatoes, capsicum and avocado.  Not only does it contain more flavour than the authentic Greek salad, but it also has more nutrients.  Here are some more reasons why you will love this recipe;

INGREDIENTS FOR GREEK SALAD

To make this loaded vegan Greek salad recipe you will need the following ingredients;

  • Fresh crispy cos lettuce –  Other lettuce or spinach and rocket can also be used but cos lettuce gives off the crunchiest and freshest taste and texture.
  • Red Onion – freshly thinly sliced red onion for a bit of a kick
  • Cherry Tomatoes-  Cherry tomatoes are often sweeter and  an just be tossed into the salad without chopping them up first
  • Pitted Black Olives – Very important to buy already pitted olives, otherwise, you will spend ages trying to remove the pits.  My favourite choice is kalamata olives.
  • Capsicum – Yellow or orange capsicum works best
  • Avocado – Avocado isn’t usually found in a traditional Greek salad, but makes a nice addition and is packed full of healthy fats and fibre.
  • Cucumber – If you prefer your salad less watery, then I recommend seeding the cucumbers.
  • Red Wine Vinegarette dressing –  A homemade simple salad dressing made of red wine vinegar, extra virgin olive oil and a squeeze of fresh lemon juice.
  • Vegan Feta – I use Woolworths ”Bio Vegan feta” for my salad as it is soft and creamy.  Although there are many different recipes online for ‘tofu feta’ which I have not myself yet tried.
  • Seasoning –  Oregano, salt and pepper to taste

HOW TO MAKE THE BEST HEALTHY GREEK SALAD

  1. Roughly chop, then wash the lettuce in a colander, shaking off any excess water.   Place into a large salad bowl
  2. Thinly slice the red onion and place into the bowl
  3. Chop the capsicum into small pieces
  4. Make your homemade salad dressing by combining the olive oil, red wine vinegar, dried oregano flaskes and seasoning into a small jar and mixing well.
  5. Slice the cucumber in half and scrape out the seeds and discard. Chop the cucumber into chunks and then toss the veggies, olives, and feta cheese in your homemade greek salad dressing.

You can also add some minced garlic in addition to your homemade salad dressing for some extra flavour.

Ingredients

1 Whole Cos Lettuce

1/4 Red Onion Thinly sliced

8–12 Cherry Tomatoes

1/4 Cup Pitted black kalamata olives

1/2 Yellow or Orange Capsicum 

1/4 Cucumber chopped

150g Vegan Feta

1 Ripe Avocado Sliced

FOR THE DRESSING

3 Tbsp Olive Oil

4 Tbsp Red Wine Vinegar

1/2 Fresh lemon

Seasoning –  Oregano, salt and pepper to taste


  1. Roughly chop, then wash the lettuce in a colander, shaking off any excess water.   Place into a large salad bowl
  2. Thinly slice the red onion and place into the bowl along with the chopped capsicum and sliced avocado
  3. Slice the cucumber in half and scrape out the seeds and discard. Chop the cucumber into chunks and then toss the veggies, olives, and feta cheese in your homemade greek salad dressing.
  4. Make your homemade salad dressing by combining the olive oil, freshly squeezed lemon, red wine vinegar, dried oregano flaskes and seasoning into a small jar and mixing well.
  5. Mix well and serve
