But made my way, my sweet potato shepherd pie was a hit and has now become one of my favourite mid-week meals.

THE PERFECT ADDITION TO A VEGAN ROAST DINNER
There are a couple of secrets I’m going to let you in on for how to make the best roast potatoes…but that will come a little later on…
When most people think of a roast dinner, they usually think about crispy, fluffy roast potatoes that can be mopped up with oodles of gravy….mmm. And that’s exactly what you can do with these!

HOW TO MAKE THE PERFECT ROAST POTATOES
Follow these simple steps and tips on how to make the Best Roast Potatoes:
- Make Sure the oven is hot. To get your potatoes to crisp up, you need to make sure the oven is hot. So make sure that you preheat the oven to 200-220 Degrees.
- Choose the Right Potatoes. You will need to choose a floury potato such as King Edwards, Desiree or Maris Piper potatoes. Your standard white potatoes will also work too if you don’t have these kinds available. Try and avoid waxy potatoes when making roasties as they don’t go crispy as well.
- Roast potato cooking time: How long to roast potatoes for all depends on the size of them and your oven. I like to cut my potatoes in 1/4 pieces so it cuts down on the cooking time. Approximately 30 minutes each side. Although, if you are cooking 1/2 pieces then they will take slightly longer around 40mins each side.
- Shake the pan. Once peeled and chopped into 1/4 pieces, I boil my potatoes for around 10 minutes. Then drain the water, place the lid on and give the pan a good shake. This helps the edges to crisp up and become fluffy!
- Transfer them to a clean dish once ready to serve. Don’t leave the potatoes sitting in the oil as they can become soggy and absorb excess oil.

How to make the best roast potatoes without using duck fat and 2 simple ingredients. These Roast potatoes make the perfect side-dish and are crispy & fluffy.
Ingredients
Roasting Potatoes (2-3 Per person)
Vegetable Oil
Kosher Salt
(Optional) Seasoning: Thyme or Rosemary
Preheat oven to 200 Degrees C
- Peel the potatoes and cut them in half and half again so you end up with quarter-sized pieces.
- Place the potatoes in a pan of salted water and bring to a boil. Simmer for 10 Mins.
- Drain the water from the pan and give the potatoes a good shake to make the outer edges fluffy.
- Transfer the potatoes into a roasting dish, leaving enough room around them to crisp and fluff up. Sprinkle with salt and any seasoning you want to use.
- Drizzle with Vegetable Oil, so there is around 0.5cm of oil in the roasting dish.
- Place in the oven and cook for around 30-40 minutes each side until golden brown and crispy.
- Transfer to a clean dish to serve.
