These sweet and crunchy Maple Roasted Carrots made in the oven are the perfect side dish for the festive season alongside a nice Vegan Nut Roast. They are made extra delicious by adding crumbed Biscoff to the recipe which gives it that gingerbread taste adding to the festiveness of this recipe. This has got to be one of my favourite ways to enjoy carrots as the roasting brings out the sweetness, along with the maple syrup and oil which caramelises in the oven.
A 30 minute recipe that is a total crowd pleaser!! This side dish goes well with a number of different foods. From roast dinners, side dish for BBQ’s, dinner parties, mid week meals with ”meat and two veg” etc.
Roasting carrots in the oven brings out their sweetness, instead of just boiling them which makes them taste bland. This is also a kid-approved recipe! A vegetable dish that your kids will want a second serving…you did hear right! These oven-roasted carrots can also be made gluten-free by not adding the crumbled biscoff and swapping for a gluten-free option instead.
No need to peel them! The skin adds texture, flavour and fibre. Just make sure that you wash the carrots thoroughly first and lightly scrub them.

WHAT YOU WILL NEED FOR THIS SIMPLE RECIPE
- Dutch Carrots – Dutch carrots are my favourite type of carrots as they taste sweeter thank your standard ones. TIP:– Break off the carrot tops as soon as you buy the carrots as the greens are being kept alive by the carrot itself. This uses up the carrots nutrients and energy making it less fresh and nutritious when consumed. If you are worried about waste, you can give the carrot tops to your chooks, bunnies or use it in a salad. – My rabbits love carrot tops, so I never get a chance to cook with them because my little darlings get to them first!
- – This recipe uses maple syrup instead of honey, making it free from animal products and 100% vegan friendly. The maple syrup works really well with this recipe as its runny and you can evenly cover the carrots
- Melted Vegan Butter – I use Nuttelex, its dairy free and soy free and gives the carrots a nice buttery taste. I use this instead of olive oil.
- Biscoff – These are accidentally vegan biscuits. They taste kind of like a ginger biscuit so you can substitute biscoff for and alternative if you can not find them. Adding biscoff to the recipe adds crunch, flavour and texture.
HOW I MAKE MY ROAST CARROTS
Its pretty straight forward to make and doesn’t take much preparation work. Just remove the tops off the carrots and toss them with the melted butter and maple syrup. You then lay them out on a baking sheet and roast them in the oven for 25 mins, turning half way through.
If you like your carrots a little softer then increase the time to 30minutes or until they reach your desired tenderness.
For this recipe, I just used the one bunch of dutch carrots which served 2 greedy adults but would also be perfect for a family of four. If you are serving this at a dinner party, just double or triple the ingredients if you want to make more for the table.
I also used this brand of Maple Syrup As it is Organic and readily available.
DO YOU HAVE TO USE DUTCH CARROTS?
No! You do not have to use Dutch carrots for this recipe, but I like to use them as they are sweeter and tastier than normal carrots. If you do decide to use the standard carrot then, peel and thinly slice the carrots into sticks so that when they cook they are nice and tender.
You could also chop the carrots into rounds, as long as the slices are even so they cook all the way through at the same time.

1 Bunch Dutch Carrots
2 Tbsp Melted Butter
2 Tbsp Maple Syrup
2 Crushed Biscoff
Salt and pepper to season
- Preheat oven to 175 Degrees C
- Remove the tops off the carrots and toss them with the melted butter, maple syrup and seasoning.
- Lay them out on a baking sheet and roast them in the oven for 25 mins, turning halfway through.
- Crush the biscoff and spread it evenly throughout the carrots before serving.
Notes
If you like your carrots a little softer then increase the time to 30minutes or until they reach your desired tenderness.
