This Simple 4 Ingredient Easy Vegan Smashed Chickpea Guacamole recipe that is super quick to make. It makes a delicious Corn Chip Dip, Sandwich filling for a simple lunch, taco filling for Mexican night or you can even mix it in with Pasta. Guacamole is an avocado-based dip most commonly popular in Mexico and was first developed by the Aztecs.
This recipe is super high in fibre, protein and healthy fats, making it a great choice to snack on when you are feeling a little peckish. It is also Vegan Keto-friendly, gluten-free, dairy-free soy-free.
I tried Smashed Chickpeas and Guacamole for the first time last week by accident. I made myself some Vegan Lettuce Taco Boats stuffed with Guacamole and Chickpeas as I was out of black beans so I used the Chickpeas I had in my pantry and fell in love. It also goes really well with or on
Now, Smashed Chickpea Guacamole is a regular occurrence in my kitchen when I’m looking for a simple lunch idea to make in under 5 minutes.
CHOOSING THE PERFECT AVOCADO
The trick to delicious creamy guacamole is the avocados, they have to be perfectly ripe with no brown spots or bruising on the inside. If your avocado is too hard then it will be difficult to mash and it won’t be as creamy. Guacamole should be made just before serving to prevent it from browning, but the lemon or lime juice should help keep it looking fresh.
For this recipe, I used my Pestle and Mortar to mash up the Chickpeas and Avocado, if you do not own a pestle and mortar you can use a blender or smash the chickpeas with a fork in a large bowl. I like to use my pestle and mortar as it doesn’t grind it too finely and gives it a nice texture.

I usually prefer to use lime for this recipe but only lemons were available in my local supermarket at the time so I had to make do with them instead.
I started making this Smashed Chickpea Guacamole by spooning out my avocado into the dish and then adding the chickpeas, salt, lemon or lime juice and olive oil and mashed all the ingredients up together.
Health Benefits of Avocados
Avocados are a fruit and have over 20 Vitamins and minerals and more potassium than bananas. They are loaded with Fibre, good Fats and Omega 3 Oils which help protect your heart. They are low in carbohydrates, sugar and help regulate Blood sugar making them the perfect choice for Vegan Keto diets.
Optional – Sprinkle some Chilli Flakes on top of your Guacamole to give it a kick.
For this recipe, I used a tin of chickpeas instead of cooking up some fresh chickpeas as today I was saving time. This makes the perfect sandwich filling if you are planning on having a quick lunch and gives you a tasty meal in under 5 minutes.

1 Can Chickpeas
2 Tbsp Olive Oil
1 Avocado
1/2 Freshly Squeezed Lemon
Salt and Pepper to taste
(Optional Chilli Flakes)
- Drain and rinse your chickpeas and add them to a mixing bowl
- Mash the chickpeas with a fork and gradually add in the lemon and olive oil.
- Mash the Avocado and mix in with the chickpeas. Add your seasoning and optional Chilli Flakes to taste.
- Serve as a dip, in a sandwich, in tacos or over your favourite Pasta.
